Affogato al caffe

Aside from serving a bowl of M & Ms at the end of a dinner, this is the easiest stand in for dessert you could find. And one of the most delicious. But you need to make sure you have the best ingredients - the very best coffee (try Santa Lucia Estate Coffee) and the very best vanilla ice cream. With only two ingredients, why not?

Serves 4

8 scoops terrific vanilla ice cream
4 espresso coffees

Chill 4 espresso coffee cups in the freezer for an hour.

Put 2 scoops of ice cream in each cup, then back into the freezer while you make the espresso. When the coffee is ready, put the cups on saucers and pour coffee over the ice cream and serve at once.

If you like sweet coffee, add sugar and stir before you pour over the ice cream. But the melting ice cream will sweeten it a good deal.
