Beef - what's the beef about it?

There are three main grades available in supermarkets, though other grades apply to cuts that don't appear on the meat counter:

USDA Certified Prime, Choice, and Select. 

USDA Certified Prime beef is a grade granted to only three percent of steaks sold in the U.S. It is for beef with the highest content of marbling (intramuscular fat) - what gives good meat its flavor and texture. 

Choice beef has moderate marbling.

Select beef is the leanest grade. 

Beef labelled Grass-fed beef, Naturally-raised beef, or Organic beef is raised without hormones or antiobiotics. But only Organic beef will have been raised on certified organic feed or grass.
