Belotta pork coming to Wagshal's!
Pam Ginsberg, the butcher with Aaron Fuchs at Wagshal's, tells me that they are discussing importing exclusively Spain's famous belotta pork at the end of May. That will make Wagshal's the only supplier outside of Spain and Japan of this delectable black pig raised on acorns that turns, cured, into Iberico ham.
If it happens, 2000 pounds only are being flown in. So keep your fingers crossed and put your order in now!
