Brioches

Brioches are a chef's toque-shaped French bun made from a sweet yeast dough made rich, yellow and fluffy with large amounts of eggs and butter. If you're a 'dunker' brioches are better than croissants - they don't leave flaky bits in the bottom of your hot chocolate or coffee. But the French can come to blows over whether it's right and proper to dunk, either brioches or croissants.

Good brioches can be found at Patisserie Poupon,1645 Wisconsin Ave NW, 202 342 3248 and at Firehook Bakery on Fri, Sat and Sun at each of their branches.

If you're looking for some to serve toasted, the way of the French, with a foie gras or a chicken mousseline and a sweet onion marmalade on the side, the challah bread from Breads Unlimited in Bethesda makes a good substitute.
