Derma & Kischkes

Derma, or in Yiddish "kischkes", are the names of a traditional dish often served at bar mitzvahs and weddings. Under either name, they are stuffed intestines, not unlike the kokoretsi of Greece.

Katz's Kosher Super Market, 4860 Rolling Brook Pkwy, Rockville, 301 468 0400, is a source.
