Extras: Toddy coffee

Several eatWashingtonians have offered this pointer to Toddy Coffee, a method of making good coffee from cheap ground brands.

Apparently you "brew" the coffee by steeping the grounds in a special plastic tub for 12-24 hours. After the grounds have soaked for the desired amount of time, you filter it out by pulling the plug at the bottom of the unit and placing it over the glass carafe. You can keep the concentrate in the fridge for up to two weeks.

The concentrate is somewhat like the Camp Coffee syrup familiar to Brits, but not sweetened. Mix the concentrate with water or milk to suit your taste. One eatWashingtonian heats up the concentrate and mixes it with hot milk for café au lait.
