Fried chicken a US invention? Not.

Fried chicken may be considered the ultimate Southern staple. But it was probably brought to the US by the Scots. Before you have apoplexy, that's the nation that invented the deep-fried Mars Bar. Dip a chocolate bar in thick batter and deep fry it and you'll deep fry anything. Case closed.

Deep frying is as old as the culture of the Egyptians. And of the Ancient Romans. As well as the culture of China. While the English preferred to boil or bake their chicken, the Scots took to deep-frying the birds in fat. When the Scots joined early emigration to the US, they imported with them their taste for it cooked this way.

Later, when Africans were brought over to work on plantations, they were allowed to keep chickens which were cheaper to raise than cattle, sheep or pigs. With their own long history of deep-frying, cooks among them added their traditional seasonings and spices, deep-frying the chickens for special celebrations.
