Ginger Beer
Ginger beer is a refreshing, spicy soda that originated in the Caribbean, easily made at home. You just need to keep feeding its 'mother'...
To make the 'mother':
Mix 1/2 oz of dried yeast with 3/4 pint of warm water, 2 teaspoons of ginger powder and 2 teaspoons sugar.
Leave the mixture in a warm place for 24 hours, then feed daily with 1 teaspoon ginger powder and 1 teaspoon sugar.
After 7 days, strain through a muslin cloth.
To make the ginger beer:
Dissolve 1 1/2 lbs sugar in two pints of water. Add the juice of two lemons and the strained yeast liquid.
Dilute with 5 more pints of water, mix and bottle in clean bottles with corks or secure stoppers. Leave for seven days before drinking.
For further quantities, carry on feeding the original 'mother' with the daily teaspoons of ginger and sugar.
Add it to a measure of Rose's Lime Juice for Jungle Juice, a non-alcoholic cocktail.
Remember: sugar + yeast does, however, make this very mildly alcoholic.
