Goat's meat

Goat's meat, according to the UN's Food and Agricultural Organisation in Rome, is the world's most widely consumed red meat. It's currently being bred by Bill Niman, who was the producer, before he left the business he had begun, of grass-fed cattle, under the name BN Ranch. Until there's enough of it to feed markets as well as chefs' cold storage, find it at the Giant on the corner of Wisconsin Ave NW and Newark St NW. It's also available at West Indian and West African markets, like Eko Food Store, 6507 Annapolis Rd, Landover Hills, 301 341 5050. It's also available at Filipino Home Baking & Grocery, 11222 Triangle Lane, Wheaton.

Try Negril Bakery's jerked chicken and goat pasties, nearby at 965 Thayer Ave, Silver Spring, 301 585 3000.

Halal goat, lamb, beef and veal is slaughtered twice a week by Reza Farajai for his butchers, Rockville Gourmet Halal Meat, 1331-C Rockville Pike, Rockville, 301 424 4444. He also sells whole halal goats and lambs.

Find really good goat meat at the Lebanese Butcher, 113 E. Annandale Rd, Falls Church, 703 533 2903.
