Hey, mixologists! An organic whisky's coming!

Very soon you'll be able to drink whisky the way it was originally supposed to be. A Scottish distillery is launching 500 cases of a ten-year old single malt that's organic. - the world's first.

Every step of production, from the growth of the barley to the casks and the bottling has been certified by the UK's Organic Food Federation (which has so many more snapping teeth than its gummy US counterpart). Even the distillery's stills had to be cleaned to meet organic standards.

It comes from Deanston Distillery near Doune in Perthshire. Master blender Ian MacMillan says they've turned the clock right back "to make whisky the way it was made originally. There's been nothing added, and nothing taken away." Even the casks had to go through stringent de-charring at a cooperage to become truly organic.

"It's got a barley sugar characteristic," says MacMillan. "It's very clean and light."

Other companies have produced organic whiskies, like Highland Harvest Scotch Whisky and Gordon & MacPhail. But they're the young kids on the bar shelf. This is the first ever aged single malt.

The nitty gritty: it goes on sale in January. There are only 3000 bottles, going on sale in the US, Japan and the UK. It will cost $77-88. The market? Appreciative drinkers with green ethics. And anyone who relishes a good, clean dram.
