If you're using lemon zest, make sure you scrub the lemon well first. To extract the most juice from a lemon, freeze it whole then defrost it for use. They tend to be rather rounder, without a pointed end. The lemons that look most traditionally lemon-like have much thicker skins and produce less liquid.
