Mains: Thai Basil Chicken

Asia Nine's recipe is for one of Thailand's most popular dishes - an elegant one, quick and easy to make that's layered with flavors.

Serves 2

1 chicken breast
1 tablespoon Oyster Sauce
½ teaspoon Sweet Soy Sauce (Kecap Manis)
1 tablespoon garlic, peeled and chopped
2-3 Thai chilis, according to heat desired, chopped
1 handful Thai or Italian basil leaves
1 tablespoon vegetable oil
¼ cup chicken or vegetable stock 

Slice chicken breast into nice thin slices.
Heat oil in in a heavy bottomed saute pan or wok, add the chopped garlic and Thai chili, and stir fry until golden.
Add in the chicken and saute.
Add in stock soup to the pan, and mix in well.
Flavor with the oyster sauce and sweet soy sauce, adding more as needed, to taste.
Quickly stir-fry the basil leaves once the chicken slices are cooked through.
Serve with boiled or steamed rice.
