Jaggary
Sold in jars, in solid cakes or balls that come in cans, jaggary is the local Indian and South East Asian name for 'palm sugar'. It's an unrefined brown sugar extracted from the sap of the jaggery palm that grows in East India. As well as being used in cakes and as a general sweetener, it's a key ingredient in some vegetarian curries.
