Anchovies

One of the most unpopular fishes, anchovies nevertheless are the culinary equivalent of the Wonderbra. They add not just saltiness but body to every dish they're used in. And if you don't confess, most critics won't know they're there.

Chef Peter Smith is on the gin
The lunch shift is over and chef Peter Smith, owner of PS 7’s restaurant is surrounded by gin. No, he’s not relaxing over a drink. The gin is in bowls in an pre-formed state.
