Fish: Shrimp Fritters with Comeback Sauce
Serves 4
1 cup flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon pepper
2 large eggs
1/4 cup beer
1 pound shrimp
1 medium onion, chopped
1 jalapeno pepper, seeded and minced
2 garlic clove,s minced
1 tablespoon chopped parsley
vegetable oil for deep frying
Coarsely chop shrimp and set aside.
Beat flour and next 5 ingredients at medium speed with electric mixer until smooth. Stir in shrimp, onion, and next 3 ingredients.
Chill two hours.
Mold into small balls and fry in vegetable oil 1 inch deep at 375F till golden brown. Drain on paper towels and serve at once with Comeback Sauce.
Comeback Sauce
2 cups Mayonnaise
½ cup Grainy Mustard
3 roasted red peppers, puréed
1 teaspoon Worcestershire sauce
Tabasco to taste
1 tablespoon chopped parsley
1 tablespoon chopped chives
1 tablespoon chopped cornichons
1 teaspoon lemon juice
1 teaspoon chopped garlic
½ teaspoon paprika
1 teaspoon cider vinegar
Roast peppers over open flame. Place in a mixing bowl and cover with plastic wrap to steam. Peel and remove seeds. Place in a blender and blend until smooth.
Fold all remaining ingredients together.
Refrigerate what is not used.
